I'd have to ... try to create or summon a chocobo that .. knows you or something .. or ideally someone I haven't interacted with and thus wouldn't know to put into it..

Of course. It would be my responsibility. But it wouldn't answer the question of whether you're just making a copy of something based on your memory, or if you're making a copy of the actual creature with ITS memories intact.
